Miso Cod

Delicate, flaky cod infused with a rich umami glaze—this Miso Cod is the perfect balance of sweet, salty, and savory. The combination of miso paste, soy sauce, honey, and fresh ginger creates a beautifully sticky marinade that enhances the natural sweetness of the fish. Quick to prepare and packed with flavor, it’s ideal for a nourishing weeknight dinner or an impressive dish for guests.


Ingredients:

  • 2 pieces of Icelandic cod (Waitrose or any fresh cod will do)

  • 1 cm fresh ginger, thinly sliced or grated

  • 2 tbsp soy sauce

  • 2 tbsp honey or brown sugar

  • 1½ tsp miso paste


Instructions:

  1. Prepare the marinade: In a small bowl, mix together the ginger, soy sauce, honey (or brown sugar), and miso paste until well combined.

  2. Marinate the cod: Place the cod pieces in a shallow dish or container. Pour the marinade over the fish, ensuring it’s well coated. Cover and refrigerate for at least 1 hour to allow the flavours to infuse.

  3. Cook the cod: Preheat your oven to 200°C (fan 180°C/gas mark 6). Transfer the cod to a baking dish and pour over any remaining marinade. Cover the dish with foil and bake for 10–15 minutes, depending on the thickness of the fillets, until the cod is cooked through and flakes easily with a fork.

  4. Serve: Plate the miso cod with your choice of sides—steamed rice, greens, or a fresh Asian-style slaw work beautifully.
